1Watch the time (Avoid rubbery shrimp)

The biggest mistake is overcooking. Medium/large shrimp only need 2 to 3 minutes total. It should turn from translucent gray to opaque pink and curve into a "C" shape. If it curls tightly into an "O", it is overcooked.
